This is because restaurant food is typically prepared in a line, where the ingredients or cooking method will be the same one after another in their tastiest form. One of the things you should do is to pull yourself together and ask. If you know what exactly you want from your meal, make a request. If you want the chef to change the style of cooking from frying to grilling, make that request. If you want baked potatoes instead of fries, make that request. In the end you will know what is better for your health, and you are responsible for exactly that. Be polite when you make a request though. Make it a point that you have your health to watch.
When you order meals, do not order desserts until after your main meal. Sweet food can ruin your appetite for your meal if they come early. Plus, you should concentrate on finishing up the main meal before jumping into something else. Of course, it is advisable not to go for desserts, but if they come in the form of fruits, there is no harm there.
