Steaming is one of the healthiest ways to cook, and it's easy to infuse foods, such as chicken or fish, with extra flavour by adding a few aromatic ingredients to the water. Here's how.
Step 1: Add enough water to a large deep frying pan to come about 3cm up the side of the pan.
Step 2: Choose your flavours. Lemon peel and dill sprigs are natural partners for fish. Rosemary sprigs and sliced garlic go well with chicken or potatoes. To give chicken or fish a Thai flavour, try sliced lemon grass, sliced lime and torn kaffir lime leaves. Add ingredients to the water and bring to a simmer.
Step 3: Place the food you want to steam in a large bamboo steamer or metal steamer basket. Place the steamer over the frying pan (make sure the base doesn't touch the water) and steam until the food is cooked through.
Tip: Arrange foods in a single layer in the steamer with space in between. This ensures they cook evenly.
